Mother’s Day Cupcakes That Make For The Perfect Present

Róisín Lynch

We’ve all learnt the importance of the simple things this past year. Our priorities have certainly changed and we now have a better understanding of where our priorities should lie.

Although the moms in our life deserve all the fancy handbags and expensive jewellery in the world with all they do for us, there is still nothing more special than a home-made gift. Mother’s Day is coming up and with retail stores closed, it is the perfect time to get crafty with your Mother’s Day presents.

Here are some ideas for cupcake art that will make for the perfect home-made present for the mom in your life!

Start by using your favourite basic cupcake recipe and then choose from the following options for the topping!

Strawberries and Cream

The perfect combo! Strawberries and cream is always a tasty combination, even more reason to use them as a cupcake topping and perfect for Mother’s Day  For this one you will need:

300g icing Sugar

1 ½ – 2 tablespoons milk

100g unsalted butter

2 teaspoon vanilla essence

Pink food dye

Punnet strawberries

While your cupcakes are cooling, put your unsalted butter in a mixing bowl (You may need to soften it in the microwave for 10-15 seconds). Whisking the butter first makes it easier to mix the icing sugar in without the powder going everywhere!

Add the icing sugar, make a hole in the middle of the mixture and poor half of the milk in, whisk until you get the desired texture. Ideally the mixture be soft but still hold well.

Add in your vanilla essence and food colouring – just a tiny bit at a time as it is quite pigmented and can form a dark pink very fast. You are aiming for a very pale/ rose coloured pink!

Cut off any bumps on the top of the cupcake to make a nice, flat surface.

Using a piping bag, pipe the icing on to the cupcakes, starting from the outside and working your way in towards the centre, building a nice layer up.

Half your strawberries, leaving the green stalks on and place them on top of the cupcakes!

You can get creative and put them in a box with a bow or serve them up on a cupcakes stand! They’ll taste good no matter what way you serve them and they will be sure to bring a smile to your mums face

Pink Rose Cupcake

These Pink Rose cupcakes are super easy  to make but taste really good! Once again start by baking your cupcakes with your cupcake recipe of choice! A small cupcake case is recommended for these ones, as they will be easier to decorate and give off more of a rose impression.  They are very similar to the Strawberry and cream cupcakes, just smaller and without the strawberries. If you wanted you could easily do a mix of the two!

Once again you will need:

300g icing Sugar

1 ½ – 2 tablespoons milk

100g unsalted butter

2 teaspoon vanilla essence

Pink food dye

Put your unsalted butter in a mixing bowl, add the icing sugar once the you have whisked the butter.

Make a hole in the middle of the mixture and poor half of the milk in, whisk until you get the desired texture. Once again nice and soft but still firm.

Add in your vanilla essence and food colouring, making sure not to add too much as it is a pale pink/ rose colour you are aiming for!

Cut off any bumps on the top of the cupcake to make a nice, flat surface.

Using a piping bag, pipe the icing on to the cupcakes, mimicking the appearance of a rose.  Start from the outside and work your way in towards the centre, building up a nice layer. Don’t go as high with these ones as you want to it to resemble a rose as much as possible.

Package them up and your gift will be ready!

A Simple Message

Nothing says I love you like a few nice words and food! These ones are nice and easy to make and will make your mum feel loved and appreciated this Mother’s Day!

You will need:

Icing sugar

Water

Baby pink ready to roll fondant icing

White writing icing tube

Circle cutter

Once again make your cupcakes, using a cupcakes recipe of choice.

In a bowl mix together a tablespoon of icing sugar with a teaspoon of water to make glace icing. Leave aside.

Flour your surface with a little bit of icing sugar. Roll out your ready to roll icing.

Using your cutter, cut out the same number of circles as you have cupcakes.

Cut off any bumps on the top of the cupcake to make a nice, flat surface.

Using a teaspoon (or your finger!) put a dot of the glace icing on to the cupcakes.

Place a pink circle on top of each of the cupcakes.

Now choose a word of your choice. Using the white writing pen write words such as “Mum”, “Love” or “Happy Mothers Day” spread out over three cupcakes! The choice is yours. Get creative and enjoy!
